For your one-wheel, your track's 3-D printed paddles are too tall and should be closer to less than 1/2" and much thicker at each paddle's base where they are connected.. Why dont you set propeller on each end, beyond the propeller, add a vertical wing with pivot to stability in-flight mode. You'll have a single wing spinning on itself and able to fly vertical and horizontal.... I don't know if I'm been clear!

I want to note that PETG sinteres well when overheated ~245-250 degrees Celsius, but becomes more brittle, PLA is already brittle but much harder and reacts well to overheating during printing
